CAULIFLOWER MORNAY
Tender cauliflower baked in a rich, creamy cheese sauce until golden and bubbling.
Instructions
- Cut the cooked cauliflower into four.
- Reheat in a pan of hot salted water, or reheat in butter in a suitable pan.
- Place in vegetable dish or on greased tray
- Coat with 1⁄4 litre Mornay sauce (See below for recipe).
- Sprinkle with grated cheese.
- Brown under salamander and serve.
- Mornay Sauce: Melt the butter in a thick bottomed pan.
- Add the flour and mixing.
- Cook for a few minutes over a gentle heat without colouring.
- Remove from the heat to cool the roux.
- Gradually add the warmed milk and stir till smooth.
- Add the onion studded with a clove.
- Allow to simmer for 30 minutes.
- Remove the onion, pass through a conical strainer.
- Return sauce back to the pan and return to heat, add het grated cheese
and stir till melted.

- 50g Cheddar Cheese (Grated)

- 100g Olive Oil
- 100g Flour
- 50g Cheddar Cheese
- 1L Milk
- 1 Studded Onion
